Sometimes, there are moments when we all feel nostalgic, and all of a sudden our mouths water. The fragments of memories start joining, and keep on joining until they have all come together to form a great big picture.
We see our mothers in front of our eyes, holding a bowlful of something. We go closer, and closer, until we find out, that she is holding a bowlful of your favorite food. Be it a humble Dal-Chawal, or a nice bowl of sweet pudding. At that moment, we have a desperate craving for home-cooking. That longing, my friends, cannot be expressed in words. It is a longing so powerful, that only when you experience it, then you know what it is all about. Even the best of foods, created to perfection by the world's best chefs, cannot drive away that craving. It is like a magical lock in the stories, that can only be opened by one kind of key. Just imagine, you're sitting down on a nice soft chair, with that bowl of love and affection. Once you take that little bite, you forget about everything else. Your mind becomes tranquil, and your face, has the expression of sheer bliss. It's like sitting in a warm bath after a tiring day. "Oh my god!", says your mind in a state of sheer bliss, and you just heave out that air of tiredness and exhaustion and you breath in pure, 100%, relaxation.
Beside you, you have your caring mother standing, and she just cannot refuse you another bowl! Sounds like the perfect state to be in, doesn't it?
Home cooking is better than the best of the foods in the world, because every person has her/his variation to food. Take cake for instance, the same mixture of flour, butter, eggs, and sugar has more than a thousand varieties known, and god knows how many there are varieties depending from person to person. Cooking is always instinctive, which is the thing that always makes it good. It's like when my mom is cooking, it's always 'apne andaaze se' or with her own instinct.
The most important factor to home cooking is that it is made with happiness and love, and never on order or compulsion. Think it out... If a person is happy while cooking, the concentration will be the food and it will turn out to be good.
Good home cooking may also have a bahu praise her saasuma's food (Which is impossible to see on average Hindi soaps these days with the thaali-giro thing and all that stuff, isn't it?)
